Home made wine.
My brother is going to try to make homemade wine. He bought a complete kit from a place called Winexpert.
Comes with almost everything you need hardware wise. They also sell complete ingredient kits.
I'm not much of a wine drinker but I will keep you updated as we get the ball rolling.
I will try to get pics also.

My boss was telling me that he used to make his own wine when he was like 17. He would ferment it in gallon water jugs or something like that. He said it usually came out pretty strong.....but would definitely get him drunk

Tonight we are going to mix the first step. He bought an ingreditants kit online so we would have everything there the first try. Some kind of zin.

We made a Zinfandel. It came out pretty good. We used a kit that came with everything you need. Only change was to add sugar to raise the alcohol content. Ended up at about 9%. Still very smooth and easy to drink.
Now we have a batch of Blueberry going. This time we added a lot (12lbs) of sugar. Will let you know..............

The blackberry came out very sweet. But was about 15% alcohol.
Just started peach yesterday.

Doubled the yeast in this batch in an attempt to make it work a little faster and not be so sweet. Will update later. The 23 bottles of blackberry are already almost gone.

Reason I'm asking:
Sometimes when the ABV gets into the double digits, the weaker yeasts will die because of the alcohol content. If your bumping the sugar for more alcohol, the higher ABV might be killing your yeast.
I use EC 1118 champaign yeast when I make my corn whiskey. It's suppose to be able to tolerate up to 18% ABV.

to be honest, I'm not sure. I just ordered "general use" yeast. We did double it and it seems to be working better.
I need to get pics so you all can give me advice on our setup.
