Default Hefe's! By Mr. Beer.

The two previous batches are almost gone, WC Pale Ale is a hit with sister and brother in law, not really my style. the Vienna Lager is pretty good, much more my style.

Started up two new batchs today.


Bavarian Dark Wheat (4-6 week fermentation)
This traditional Bavarian brew has a sweet malty flavor and a refreshing finish. Brew up a batch today and enjoy a style of beer brewed in southern Germany as early as 1040.

1 Can Whispering Wheat Weizenbier
1 Can Mellow Amber UME
1 Packet Argentine Cascade Pellet Hops

And...

Whispering Wheat Weizenbier w/Golden Wheat (2-4week fermentation)
Mix the mild fruity flavor and pale gold color of the Whispering Wheat Weizenbier and the luxurious blend of select golden wheat grains and premium pale malt of the Golden Wheat UME for the most authentic Hefeweizen style beer possible.

1 Can Whispering Wheat Weizenbier (beer mix)
1 Can Unhopped Malt Extract

The hef that I brewed has really gotten a lot better over the last few weeks

The dark tastes close to ready. the other needs another week. still as a cidery taste to it.

Typically wheat beers don't need to age very long.

Cidery taste (if fermentation is complete) is usually due to to much sugar in the recipe. Once again.....not sure how your kits work....seem to remember that everything is pre-measured.

Another cause could be to high of a fermentation temperature.....and the brew is "stuck" in fermentation and can't complete

it hung around 73, as long as the ambient was close to the fermenter temp, being contained in a cooler. it is all premeasured, short of the hops i put into the dark.

2-4 weeks was the recommend fermentation time from Mr. Beer. Typical recommendation from people using these kits is to double the time Mr. Beer says for fermentation.

73 should be ok.......for a hef.....but it is a little high

Wow.....I only ferment my hefs for a week....then bottle condition for another week

Just bottled the Whispering Wheat. Later tonight or Tomorrow I will bottle the Dark.
